I love champagne cocktails that look and taste fancy, but are easy to make. Made with just two simple ingredients – sparkling Prosecco and luscious peach puree that can be made with fresh or frozen peaches– this delightful Bellini cocktail is the perfect example of simplicity and sophistication. Perfect for brunch, an afternoon on your patio, or even a celebration in the evening, it is sure to be a crowd-pleaser!

How to Make a Bellini

  1. Make the peach puree. Find the steps below for making it from fresh or frozen peaches. Pour peach puree into a glass.
  2. Top with champagne. Slowly top with Prosecco (it bubbles up quickly) and stir gently.
  3. Garnish and enjoy!

How to Make Peach Puree

For this Bellini recipe, you want to use a thick, delicious peach puree instead of something thinner like peach juice. Don’t worry, it is easy to make puree from frozen or fresh peaches depending on what is in season and you have access to. Making the puree can be done the day before and stored in the fridge to cut down on work on the day of your celebration.

Using Fresh Peaches for Peach Puree

If fresh peaches are available, this puree will be amazing! Choose peaches that are ripe but not overripe, soft around the stem, and with smooth skin. Bellini recipes traditionally call for white peaches, but yellow would be delicious as well if that is what you can find.

  1. Boil water in a saucepan. Use enough water to cover two peaches.
  2. Make an ice bath. While the water is heating up, add water and ice to a bowl.
  3. Boil the peaches. Add the whole peaches to the boiling water for 45 seconds and then use a slotted spoon to transfer them to the ice bath.
  4. Remove the skin. Once the peaches are cool, remove them from the ice bath and peel off the skin.
  5. Blend until smooth. Cut up the peaches, discard the pit and stem, and add the peach slices to a food processor or blender to puree until smooth.

Making Peach Puree from Frozen Peaches

If frozen peaches are easier for you to keep on hand, you can whip up some puree for this recipe in a flash!

  1. Thaw the peaches. Two cups of frozen peaches will be enough for about four Bellinis.
  2. Make the puree. In a food processor or blender, puree the thawed peaches until smooth.

Serving Bellinis

Open your sparkling wine just before preparing these cocktails so the bubbles are fresh and fizzy. Serve your Bellinis in Champagne flutes for an elegant appearance. Garnish with a thin peach slice on the rim of the glass.

  • 3 cups peach purée
  • 750 ml bottle of Champagne
  • 3 ounces simple syrup (optional)
