The addition of coconut rum beautifully complements the herbal mint leaves, fresh lime juice, and fizzy club soda to create a cocktail that is fragrant and refreshing!
The mojito has many variations with different fruits, like this Pineapple Mojito and Passion Fruit Mojito. The simple swap of regular rum for coconut rum such as Malibu Coconut rum is balanced and oh so smooth.
To make a Cojito at home you will need about an ounce of simple syrup, this one only takes a few minutes to whip up and lasts for a few weeks in the fridge so you can use it for other cocktails too. Then you will shy just shy of an ounce of fresh lime juice, 6-8 mint leaves (a couple for garnish), two ounces of coconut rum (like Malibu), and four ounces of club soda.
How to Make a Cojito
- In a glass add your mint leaves (save 1 or 2 for garnish), simple syrup, and lime juice
- Muddle gently with a cocktail muddler or the end of a wooden spoon
- Pour in Malibu Rum
- Add ice to fill the glass
- Stir and top with club soda
- Garnish and enjoy!

Serve your Cojito in a glass tumbler with lots of ice. Finish off the presentation by adding a couple more mint leaves and a lime wedge.
