What do you get when you add coconut to a mojito? A Cojito! A tropical twist on the classic rum cocktail makes each sip feel like a vacation. The addition of coconut rum beautifully complements the herbal mint leaves, fresh lime juice, and fizzy club soda to create a cocktail that is fragrant and refreshing!

Cojito Ingredients

  • Simple syrup: Adding just enough sweetness, it only takes a few minutes to whip up your own simple syrup at home.
  • Lime juice: Grab plenty of limes because fresh lime juice is best and you will want some lime wedges for garnish.
  • Mint leaves: Fresh mint leaves are needed to muddle with the lime juice and simple syrup. They release a wonderful aroma and flavor popular in a good mojito.
  • Coconut rum: Malibu rum is our go-to.
  • Club soda: Use freshly opened club soda so the bubbles are fresh and fizzy.

How to Make a Coconut Mojito

Here is a brief overview of how this coconut rum cocktail comes together right in the glass you will drink it from. For the full recipe including all measurements, see the recipe card at the bottom of the post.

  1. Add the mint leaves, simple syrup, and lime juice to a glass. Muddle gently with a cocktail muddler or the end of a wooden spoon.
  2. Pour in Malibu Rum and add ice to fill the glass.
  3. Stir and top with club soda. Garnish and enjoy!

How to Serve

Serve your Cojito in a glass tumbler with lots of ice. Finish off the presentation by adding a couple more mint leaves and plenty of lime wedges. Enjoy while cold.

Ingredients

  • 1 ounce simple syrup
  • 3/4 ounce lime juice
  • 6 to 8 mint leaves
  • 2 ounces Malibu Rum (coconut rum)
  • 4 ounces club soda

Instructions

  • In a glass add the mint leaves, simple syrup and lime juice.
  • Muddle to combine.
  • Pour in the Malibu.
  • Add the ice to top.
  • Stir.
  • Top with club soda and enjoy.
